Lemon and Coconut Energy Balls

Energy balls have become a new go-to snack. They are a one-pot (or blender in this case) recipe and they can be store in your fridge for your afternoon snack. The Chia Seeds, Cashews, and rolled Oats bring additional nutrients to your diet such as omega-3 fatty acids, iron, calcium, and fiber! The lemons and dates bring an acidity and sweetness to the energy balls, so that they tastes like dessert! Hope you and enjoy, and let us know what you think in the comments.

Ingredients

  • 2 cups of pitted Medjool dates

  • 1 cup of raw Cashews (unsalted)

  • 1/2 cup of Rolled Oats

  • Juice of 1 Lemon

  • 1/4 cup of Chia Seeds

  • 1/4 cup of shredded Coconut (plus extract to coat)

Recipe

  1. Combine the cashews and oats in a high power food processor.

  2. Then add the remaining ingredients. Combine until mixture sticks together, and looks similar to the photo above.

  3. With slightly damp hands (this helps to make sure the mixture does not stick to your hands) roll a small amount into the palm of your hands. They can be any size you want!

  4. Coat each ball with the remaining shredded coconut.

  5. The energy balls can be eaten right away, or stored in the fridge to enjoy later!
