Lucky Black Eyed Peas

This year we welcomed 2019 with Champagne, dancing, and family at Lou Tinaou. To start off the New Year, we cooked a traditional dish that we have been making for years. This dish is from our time living in New Orleans, and it originally has Creole roots. It is believed that Black Eyed Peas represent good luck and cabbage, wealth. Without fail we cook this meal on New Year’s day every year. From our kitchen to yours, we hope this dish will bring a little luck and love into your life this new year - enjoy!

Ingredients

  • 500g of Black Eyed Peas

  • 1 Onion

  • 2 Shallots

  • 1 Green Pepper

  • 3 Branches of Celery

  • Italian Parsley

  • 1 Hot Pepper

  • 3 Cloves of Garlic

  • 1 Veggie Bouillon Cube

  • Handful of Thyme

  • Handful of Oregano

  • Salt and Pepper to Taste

  • Vegetarian Sausage

  • Tabasco Sauce to Taste

  • 1 Head of cabbage

  • 500g of Rice

Recipe

  1. If you bought dried beans, soak overnight.

  2. Dice all the veggies (except for the cabbage)

  3. Cook the onions, shallots, celery, and both peppers in your pot with a splash of olive oil. Cook until onions are translucent (if you want your dish to be mild remove the seeds from the hot pepper).

  4. Add the drained Black Eyed Peas and the garlic to the pot. Salt and pepper to taste.

  5. Next add your herbs. These do not have to be chopped, the branches will be removed before serving.

  6. Cover with water and add a bouillon cube.

  7. Let cook over low flame for about an hour.

  8. In the meantime, cook your rice according to instructions on the package.

  9. Roughly chop your cabbage, and sauté with olive oil (we used a homemade Pili Pili, a spicy herb oil).

  10. Once the Black Eyed Peas are cooked, serve over rice with a side of cabbage. Top with Tabasco sauce, Italian parsley, and salt/pepper to taste.
