Creole Okra
For those of you who don’t know, we lived in New Orleans for a couple of years. Not only did we love the city itself, but we were introduced to creole cooking. Every dish is filled with flavor and soul, whether its a po-boy or a gumbo. We often miss New Orleans, so to soothe our heartache we cook dishes that are from the area. While in a local grocery store in the Ardèche, we saw okra and we jumped at the opportunity to make our favorite dish with the vegetable. Okra can’t be found everywhere, but if you see it in your local grocery store, take a chance to try it out!
Ingredients
4 1/2 Cups of Okra
Olive Oil
1 clove of Garlic
1 Green Chili Pepper
6 Tomatoes
3 Teaspoons of Creole Seasoning (or add to taste). We used the linked recipe, and this is great to have one hand! Delicious added roasted veggies.
Pinch of Salt (we used Himalayan Salt)
Tabasco (to taste).

Wash and chop okra.
Add to a pan with some olive oil. You want to fry the okra. If you have never cooked okra before, you will notice that they become sticky and somewhat gooey - this is totally normal!
Meanwhile, add your tomatoes to hot water. Let sit for a couple of minutes, and then take them out. This will help you to peel your tomatoes.
Mince your garlic and chili pepper. Add to the frying okras.
Once your tomatoes are peeled, chop, and add to the okras.
Add the creole seasoning and salt to taste. Let cook for about 20 minutes or until the okra are tender.
Meanwhile cook your rice. For a family of three we cook about two cups of rice.
Serve over rice, and a dash of Tabasco if your tastebuds can handle it!
