La Tarte aux Abricots de Camille

Today we stopped at a fruit stand by the side of the road, they sold buckets filled with perfectly ripe apricots and other classic summer fruits. We were so inspired by the aroma of the sweet apricots, we decided that we just had to make a tarte aux abricots. Here is the recipe below!

Ingredients (serves 8 people):

  • 8 big apricots 
  • One packet of vanilla sugar or 7.5 grams of sugar and two teaspoons of vanilla 
  • 250 grams of flour
  • 125 grams of sugar
  • 100 grams of butter
  • One egg
  • zest of one lemon
  • A pinch of cinnamon 
  • A pinch of salt

The Crust:

  1. Pre heat oven to 180°c
  2. In a bowl combined egg, sugar,salt, and lemon zest.
  3. In another bowl combined flour and cinnamon. Make a hole in the middle of mixture, add butter and mix together with hands.
  4. Add egg mixture to flour mixture together and combined. 
  5. Rub butter and flour on pie pan 
  6. Roll out dough and place in pie pan (chill dough before if needed)

The Filling:

  1. Cut apricots in half, then the half into fourths 
  2. Place as desired in pie pan
  3. Sprinkle vanilla sugar on the tart.
  4. Bake for 30-45min
We served it with raspberry sorbet.
