La Mousse au Chocolate de Sylvie

For years Sylvie (my sister) has treated us to her wonderful chocolate mousse. Its light, fluffy and utterly delicious! This year she has finally agreed to share her secret recipe with us, so we decided to share this divine mousse with you guys! 

Ingredients:

  • 200 Grams of good quality cooking chocolate (broken in small pieces)

  • 6 Organic eggs

  • 1 Tablespoon of butter

  • 1 Tablespoon of water

  • 1 Pinch of salt

Process:

  1. In a sauce pan, melt chocolate, butter and water on a low flame.

  2. In the meantime, separate the egg yolks from the egg whites.

  3. Mix egg yolks with melted chocolate while the melted chocolate is still hot, then pour into another bowl.

  4. In a separate bowl beat egg whites and a pinch of salt with a hand held mixer till stiff pecks form.

  5. Add 3 tablespoons of the beaten egg whites to the melted chocolate, and quickly combined together, (the mixture should be light and airy). Then gently fold the remaining egg whites into the chocolate mixture.

  6. Pour your mousse into small servings dishes and let cool in fridge for at least 3-4 hours before serving.
