Panzanella Salad

During the summer we can’t get enough of salads. There are days that are so hot, that salads are the only meal we want to eat. Today we have one of our go-to recipes that we have been making often these past couple of weeks. We hope you enjoy it as much as we do!

Ingredients

  • 1 Block of feta cheese

  • 1 Green pepper

  • 1 Cucumbers

  • 1/4 Red onion

  • A quarter of a loaf of bread (or more!)

  • 6 Tomatoes

  • 1/2 Cup of black olives

  • 1/4 Cup of capers

  • For the vinaigrette, we suggest this recipe.

  • 1 Clove of garlic

Recipe

  1. Chop all the veggies into medium sized cubes.

  2. Cut bread in medium sized cubes, and toss with olive oil in a non-stick pan.

  3. Once the bread starts to turn golden brown, salt and add 1 clove of garlic. Stir, and let cook for a couple of minutes. Turn off the flame, you do not want to burn the garlic.

  4. Mix together the ingredients for your salad dressing, we recommend this one. You can also use white vinegar instead of red vinegar in this recipe.

  5. Toss the bread, chopped veggies, crumbled feta, olives, and vinaigrette together. If you are not serving right away, add the bread to the salad right before serving or else it will absorb the vinaigrette. Enjoy!
