Whipping Up a Quick and Delicious Dinner!

Sometimes its hard to come up with healthy meals on a daily bases.  It often gets to the point where take out would be so much simpler.  When we get into one of those ruts where we have no idea what to cook, we usually whip up a quiche.  They are relatively easy to make, and can pretty much consist of leftovers.  Lately we have a lot of family at our house. Family friends, aunts, uncles, and cousins crowd the house and  it gets hard to cook up something everyone will like.  But usually everyone can agree on a nice quiche.  We always make several quiches, one vegetarian and one with meat!  That way we have several options, and everyone is happy, which is what we want! Pictured below we have a vegetarian quiche which consists of zucchini, mushrooms, onions, and red peppers.  The second quiche is the exact same, but with little chunks of ham.  

Really simple to make, we chop up all the veggies and saute them in a pan.  Don't cook the veggies for too long, because they will cook longer in the oven later. While thats cooking, we line a pan with parchment and bake the quiche dough (we buy this pre-made) for about 5 minutes in the oven.  We also whisk together eggs, cream, and sometimes cheese in a bowl.  Take out the quiche dough from the oven, and add the slightly cooked veggies, the eggs, and cream. Then place the quiche in the oven for about 20 minutes.

For a vegan option, replace the eggs and cream with tofu.  We have also tried this, and its just as good!  We usually add cumin and salt to the tofu to give it a little more taste.  

Of course we usually have a salad and fruits to go with the meal.  And there you have a nice dinner, that didn't take too much time or effort! Hope you enjoy!
