Dinner By Candlelight

Yesterday was our first rainy day here.  Its always nice to have a break from the heat, and stay indoors playing board games, and this is exactly what we did, for hours!  By the time dinner came around the sun had started to come out, and we were able to have dinner outside.  We had bought a ton of candles, thinking the electricity would go out during the storm.  We didn't use one single candle during the rain storm, so we thought it would be great to eat dinner by candlelight.  We had another one of our favorite meals for dinner again, eggplants with a tomatoe sauce.  We will add the recipe below, and also some photos of our dinner.

Recipe

Step One: First thinly slice the eggplants. Sprinkle salt over the slices. Set them aside for an hour. 

Step Two: Heat a saucepan with either olive or coconut oil. 

Step Three: Pat dry eggplant. Then take the sliced eggplant and grill them in the oil until they are lightly brown on each side.

Step Four: Get a plate ready with a paper towel on it.  The towel helps absorb the excess oil once the eggplants are finished frying.  

Step Five: Arrange the eggplant in a baking dish.  

Step Six: For the tomato sauce, dice fresh tomatoes, garlic, thyme, and add everything to a sauce pan. Let cook for about 20 minutes.

Step Seven: Once the tomato sauce is done, pour it over your eggplant that is arranged in a baking dish.

Step Eight: Sprinkle emmental over it, or any other cheese.

Step Nine: Put it in the oven for about 20 minutes.  The oven was heated at 180 Celsius.

Step Ten: Once the 20 minutes are up, its all ready to serve!
