Today we have a classic French dessert for you to try - Cherry Clafoutis. Cherry season is finally upon us, and they are being sold at markets and grocery stores - our neighbors are even selling the cherries from their own backyards! The batter of this cake is very similar to flan, but not as creamy. The traditional recipe includes the pits in the cherries to add an almond like flavor. This is definitely something you can do if you are not worried to chip a tooth! We hope you love this recipe as much as we do, let us know what you think in the comments. Enjoy this cherry season!

Ingredients

  • 1 Tbs unsalted butter (room temp.)

  • 1/3 Cup + 1 Tbs of granulated sugar

  • 3 Eggs

  • 6 Tbs Flour

  • 1 1/2 Cups of heavy cream

  • 2 Tsp Vanilla extract

  • 1 Tsp Lemon zest

  • 1/4 Tsp Salt

  • 3 Cups of pitted cherries

Recipe

  1. Preheat oven to 375 degrees.

  2. Butter your preferred baking dish. We also added parchment to line our dish.

  3. Beat eggs and 1/3 cup of the sugar until light and fluffy. We used an electric mixer for this.

  4. Mix in flour, cream, vanilla extract, lemon zest, and salt.

  5. Meanwhile pit the cherries, and arrange at the bottom of your baking dish.

  6. Pour batter over your cherries, and let the cake bake for 35-40 minutes (or until golden brown).

  7. Enjoy!
