Pili Pili Oil

This is a recipe we have often used in many of our other dishes on this blog. The oil can be found in local stores in France, as it is often used on pizzas. We love to use it on our homemade pizzas as well, but we have found that it is excellent incorporated in many other dishes, such as on roasted vegetables and a splash in soups to give the flavor an extra kick. We wanted to share the recipe with you all as its easy to make.

We have found that using fresh herbs really brings out the flavor in the oil. If you have a garden, really make use of the herbs you have! In this recipe everything is from our organic garden (except the chilis and Fennel Seeds). Let us know if you like the recipe!

Ingredients

  • 4 Bay Leaves (crumbled)

  • 8 Sprigs of fresh Thyme

  • 4 Sprigs of fresh Rosemary

  • 12 Whole small red dried Chili Peppers (broken in half)

  • 1 Cup of Olive Oil (does not need to be extra virgin)

  • 2 Tsp of Fennel Seeds

Recipe

  1. Place half of herbs in to medium sauce pan. Add all the olive oil and chilis. Extra herbs will be needed for the final product.

  2. Heat over low heat until the oil begins to sizzle.

  3. Turn off the heat, and wait for oil to stop sizzling, Allow to cool.

  4. Transfer the olive oil to a sterilized bottle. Filter out the herbs.

  5. Add fresh herbs to the bottle, and the chilis if you want to have the oil be extra spicy.

  6. Close tightly, and let sit in a cool, dark place to mature for a week.
