Banana Pancakes

The weekend has sadly ended, and we are back to reality. To help you get through Monday, here is an amazing recipe for Banana Pancakes. Please eat your heart out - because they are somewhat healthy...the recipe is below!   

Banana Pancake Recipe:

INGREDIENTS:

1 very ripe banana
1 teaspoon baking powder
1 Egg
A pinch of salt
1/2 teaspoon vanilla extract
1 Tablespoon almond butter
1 Tablespoon coconut oil
3 Tablespoons almond milk
1/2 cup rolled oats
1/4 cup flour
3 Tablespoons semisweet chocolate chips (We used Mast Brothers Vanilla Chocolate)

STEPS:

  1. Mash banana with baking powder
  2. Combine Egg, Salt, Coconut Oil, Almond Butter, Almond Milk and Vanilla with mashed banana
  3. Slowly stir in Oats and Flour
  4. Fold in Chocolate chips 
  5. Heat pan on medium-low heat, add coconut oil. 
  6. Add two spoons full of batter (we recommend making smaller pancakes because the batter is thick.) Cook each side till golden brown.
  7. We served our pancakes with local chestnut honey and vanilla chocolate chips. Feel free to add whatever you want. Enjoy!
